Easter Bunny Cake

I have been making these bunny cakes since I made my first one with my mom when I was five years old. There have been some years when I haven't made them, but it just doesn't feel like Easter without Easter Bunny Cake.


This is a fun cake to make with your kids - whether you have little kids or big kids. 

Bunny Cake How To:

1. Make an 8 or 9-inch single round cake layer of your favorite cake recipe.

2. Cut the layer in half.

3. Make your favorite buttercream recipe and 'glue' the two halves of the cake together.

4. Cut a wedge of cake out where you think the head and body should separate. Put this wedge in the back. This is the bunny's tail.


5. Press sweetened coconut onto the butter cream frosting to make the fur.

6. Cut out bunny ears from construction paper. We always make them oversized.

7. Dye some coconut with green food coloring to make the grass.

8. Place pink jelly beans for the eyes and nose and sprinkle more onto the grass.

9. Enjoy!

  7. I love this cake! My godsons would flip if I made it for them... but then again, I'd have to make two so they don't fight over who gets to make the bunny ears. Happy Easter!

  10. So cute! Thanks for sharing the instructions - I will be keeping these. This cake reminds me of a childhood story where my sister proudly showed off the bunny cake she picked out and then dropped it on the way back to the kitchen. She was devastated!
