The two star ingredients of these scones are the carrot puree and sweetened coconut. The coconut gives the scones a wonderfully sweet texture. These scones are unlike the traditional scones that I make because they taste more like a dense carroty, coconuty cooky. Topped with the lip smacking lemon and orange juice glaze it just doesn't get much better than this.
My scone loving husband really, really liked these and because he doesn't care for frosting or glazes I left most of the scones unglazed, but on mine I happily drizzled the citrus glaze which, to me, took these scones to another level.
You can see how other BAKED members made these scones over at BAKED Sunday Mornings. You can find the recipe at Publisher's Weekly. If you haven't made these before, you simply must make them. Trust me. You will love them.

The scones look delicious! I'm with you.. not much for glazes on my scones - but the citrus combined with the carrot would be amazing! Yet another good recipe to add to my list of 'must bakes.'
ReplyDeleteYour scones look great! I loved these, and especially loved the citrus glaze.
ReplyDeleteLove your wire basket.
Your drizzled glaze looks so pretty! I agree that they are good without glaze, but the glaze totally elevated them! They were awesome!
ReplyDeleteThe glaze was my favorite part too! Your scones look delicious. I love the unique combination of carrot and coconut.
ReplyDeleteThese really look terrific and I like the fact they are different than a standard scone. I really intend to try these. I hope you have a great day. Blessings...Mary
ReplyDeletelookin good! agreed, the citrus glaze took these scones to a whole other level! we love these scones :)
ReplyDeleteNice looking scones. Being the sugar queen that I am, I loved the citrus drizzle, and would probably give myself a little cup of it next time to dip my scone into for more. Anyway, yours look perfect.
ReplyDeleteElaine, these look wonderful!! I didnt make them...but sounds like I will have to add to the list! The citrus glaze sounds amazing. Happy Sunday from TX!
ReplyDeleteYours look really beautiful (as are all the pictures on your site). I'm glad you enjoyed these.
ReplyDeleteI definitely need to thicken my glaze next time. These are so pretty!
ReplyDeleteThey really didn't NEED glaze did they! I loved them just as is - but love the zig zag glaze technique. Just enough tartness/sweetness!
ReplyDeleteOh yum! I made scones this morning too, but I think yours look better.
ReplyDeleteThis combo sounds great. I like the two different kinds of sweetness that the coconut and carrot each bring!
ReplyDeleteI love the carrot and coconut combo- sounds great
ReplyDeleteThese look scrumptous especially the glaze. Do you think I could substitute shredded carrots or something else for the coconut?
ReplyDeleteYour scones look gorgeous! What a great flavor combination…would love to try these.
ReplyDeleteOh, my! Your scones sound incredible...and with that glaze...ooh la la!
ReplyDeleteI really liked the glaze as well- great pictures!
ReplyDeleteThanks for the link to the recipe Elaine! A little jealous that it's warm enough for you to set up your photoshoot outdoor. It's still quite chilly in Canada!
ReplyDeleteThis is a unique combination for a scone. They look very good.
ReplyDeleteYum ! going to bake these for sure : ) thanks elaine..
ReplyDeleteGood job! They came out so high and fluffy-looking! (The reason I don't generally like scones is they're so dense and dry.)
ReplyDeleteCarrot coconut scones - I must make these as I am thoroughy enjoying vegetables in cake at the moment.
ReplyDeleteRather tasty to me...!
ReplyDeleteFabulous crumb on your scone and the photos are pretty fabulous too !
