It's been raining quite a bit the last five days, so I was glad that I decided to make the Leek and Potato Soup. I had planned to make it over the weekend, but I ended up making it after work on Monday. The prep time was very minimal, mostly chopping the leeks and potatoes. I used five gold potatoes instead of the one russet called for in the recipe. Gold potatoes are usually what I have on hand. I made no other changes to the recipe and I am glad because it was so delicious. I included the two optional sage leaves, and used four cups of chicken broth and three cups of whole milk.
I think the fresh herbs probably make all the difference in this soup. It smelled heavenly while it was cooking and what I liked is that it was a hearty soup that didn't take more than an hour to make. I even made the croutons sprinkling them with dried thyme, rosemary and garlic olive oil. Why I have never made my own croutons before is beyond me, but now that I have I will never, ever go back to store bought. I kept the soup chunky and topped it with the croutons and some snips of parsley. I will be making this many times over the winter months.

Wasn't this good? (I love your bowl, too.) Somehow, it sounded so nourishing with the milk and chicken broth, so I'm glad I made it that way.
