For this week's French Friday with Dorie I made Dorie's go-to Beef Daube and after making it I can certainly understand why it is one of her go-to dishes. Beef stew is one of my comfort foods and I usually make it during the winter months, but mine has never tasted as wonderful as Dorie's. Never again will I use beef or chicken stock to scrape up the bits on the bottom of the pan after browning the meat. Adding the brandy to the pan smelled so wonderful and gave the stew a wonderful depth. I was skeptical about using an entire bottle of red wine, but poured it in anyway and I am so glad that I did. It not only filled the house with a wonderful aroma while the stew was roasting in the oven, but also gave the meat and vegetables the most delectable flavor. I also loved the taste of the parsnips in this dish and was glad that I restrained myself from throwing in a couple of potatoes. I have not eaten or cooked with parsnips until this year and now they have become my favorite winter root vegetable.
I don't think I can go back to my old beef stew recipe after making this one - it has now become one of my go-to recipes.
And the leftovers made the most amazing and flavorful tacos. I think beef daube tacos would be a great item on a mexican or french menu.

This was also my first experience with parsnips, and I enjoyed them as well! I like how you used to the leftovers in tacos!

ReplyDeleteLovely pictures. The daube was difficult to photograph attractively, but you did. I have to admit I substituted parsley root, leftover from my CSA box, for the parsnips. My family loved it

ReplyDeleteI have always loved parsnips, because my mom used them in soups all the time. I love when I go to the store and the cashier has no clue what the funny-looking root is!

Great idea to make tacos! Looks good. I'll also have to try your monkey bread recipe. I made some once and it turned-out way too salty.

ReplyDeleteSmart with the tacos! I was thinking, along similar lines, of putting leftovers in pie dough to make empanadas.
ReplyDeleteThe tacos are perfect - a nice blend of European and Latin American cuisine. I wouldn't be surprised if something like this showed up on a food truck menu.
