After all the rich food eaten over the holidays, it was nice to return to French Fridays with Dorie and make something simple for dinner, yet hot and hearty enough to satisfy you on a cold night. I made this recipe after work and I was so happy that it didn't take any time at all to make. The onion, garlic and the mushrooms cooking in the butter filled the kitchen with a wonderful aroma. The addition of the wine and the herbs of parsley and rosemary made it smell even better.
Once you add the chicken stock you let it simmer for about 20 minutes and then in small batches you purée the soup in a blender. This was the first time I have ever made a puréed soup because my family prefers chunky soup. Really though, it is the kind of soup that satisfies both those who love smooth and those who love chunky because before serving you make a salad in the soup bowl of sliced mushrooms, snipped chives and slices of scallions before you pour the hot puréed soup over it. Add a dollop of crème fraîche and you have the most tasty soup. The hot blended soup ever so slightly cooks the mushroom salad and gives the soup an earthy flavor, but the crème fraîche mixes in with the purée and gives the soup such a creamy richness that is simply delightful.

ReplyDeleteI puree a lot of different soups because my husband is finicky with veggies in his soup. That said, he's not crazy about mushroom soup…I loved it! Your pictures and presentation are lovely!

ReplyDeleteI agree...thought it both creamy and chunkyish! I used my immersion blender and loved the result. I had leftovers for dinner tonight and I'm still amazed at something so delicious that was so simple and satisfying. My previous versions of mushroom soup involved half and half and I love that Dorie's version does not include that guilt!
