BAKED Sunday Morning: Almond Joy Tarts


This Reese's girl has never been a big fan of Almond Joys, but they are my husband's favorite candy bar, so I was really looking forward to making this tart for him on New Year's Eve. 

The toasted almond tart dough was very simple to make and smelled so wonderful while I was working with it and when the shells were baking in the oven. I had enough tart dough to make 7 four-inch tarts.

The white chocolate coconut filling couldn't have been easier to make. I found myself eating spoonfuls of it - it was that good! I found some organic unsweetened very finely shredded coconut at Whole Foods which I found that I really like so much better than the thickly shredded sweetened coconut you find in most supermarkets. And I loved the taste of the bittersweet chocolate mixed with the milk chocolate and heavy cream for the chocolate ganache. 

My husband's verdict? He gave them two thumbs up! The rest of the family thought they were very good, but no one could finish the tart at one sitting because they were a little rich, so they each ate some of their tart and saved the rest for New Year's day.
