French Friday with Dorie: Beggar's Linguine

I can't write this post without saying that my heart goes out to all those who are affected by Japan's earthquake and tsunami. 

This week's recipe is Beggar's Linguine, or linguine mendiant, and is a lovely pasta dish made with browned butter, almonds, pistachios, dried figs and raisins.


The fruits and nuts represent the four monastic orders: the almonds for the Carmelites, the raisins for the Dominicans, the dried figs for the Franciscans, and the pistachios for the Augustinians.

This is a quick and easy dish to prepare with the most prep time going to boiling the pasta. Once the melted butter turns to a golden color, you add the fruits and nuts and stir so that they are coated and continue to cook until it is golden brown. Add the drained pasta, toss until the pasta is covered with the butter mixture and salt and pepper to taste.


Top with grated parmesan cheese and some orange zest and you have a lovely savory dish that has bursts of sweetness from the dried figs and raisins and a wonderful crunchy texture from the nuts. This is a dish that is perfect to serve dinner guests as it is something they probably would not have fixed in their own homes. We absolutely loved this dish and I cannot wait to fix it again.

  15. Very nice post and after I'd posted mine I had wished that I had also remembered those in Japan. When we have such wonderful foods as this dish it makes me wish I had some of those people as our guests and that I could take care of them and share...this is a great recipe and we enjoyed it too.

  20. With so many people being skeptical and then loving this dish, I am even more upset that I skipped it (food allergies and such:( But one day I will kick the whole family out and make this for myself:)
