French Friday with Dorie
Do you like to eat a little something sweet with your cup of tea or coffee? Then these coconut friands are just the treat for you. Dorie's friands are little tea cakes made with egg whites, unsweetened coconut, sugar, flour, salt, vanilla extract and melted butter - and are perfect little bites that take hardly any time to prepare.
And I made some with just coconut because I knew John would probably like these the best and he did, although he thought the ones with raspberries were also delicious. My daughter and I liked both versions, but we particularly liked the ones with raspberries because the raspberries gave the friand a lovely little sweet tanginess. What is also tasty is that as they bake they develop a crunchy coating and so when you bite into them you taste a sweet crunchy top along with moist coconut cake.

A few years ago I bought these molds that were made in Sweden at the American Cancer Society thrift store, so I decided this recipe would be a good one to try with the molds. I also decided to make some of the friands with raspberries when Dorie suggested that friands were good with little bits of fruit.
The only difficult thing about these tea cakes is keeping yourself from eating an entire plateful.

ReplyDeleteLove your pretty shapes and so pretty with the fruit on the bottom. I had a really hard time not eating all of these...I'm a coconut lover so this recipe really ranks high for me. The colors in the last 2 photos are so pretty as they show off your friands...everything matches...looks like party food. Very nice baking!

ReplyDeleteHi, Laurie. Thank you! Yes, I sprayed them with Pam and used a little brush to get the oil in all the crevices. A few of them stuck a little bit in the corners, but the rest just popped out easily.

ReplyDeleteElaine, You sent me rushing to my kitchen storage closet. I have those molds. They are so pretty. Why didn't I think of that. Thank you for the suggestion. I also think it was fun that you put the raspberry on the bottom of the teacake so it just barely showed through. Pretty. I plunked a big blackberry right on the top of my mini-muffin and I didn't think it looked very pretty. Good but a little homely! After I write this comment, I am going to my pantry shelf and taking out ALL of my molds. Nice Post. Mary
