French Friday with Dorie: Honey-Spiced Madeleines

Fall may have arrived, but our triple digits say that we are still firmly in summer. I am dreaming of crisp fall mornings, warm cozy fires, hot apple cider and pumpkin pie. This week's French Friday with Dorie is a perfect transition recipe in that it has the spices of fall, but also the summer flavors of honey and orange. 


I used local Raspberry Honey in my madeleines which gave them even more of the taste of summer.  These were so easy and fun to make that I can't believe that it was my first time making them. For some reason, I was under the impression these would be difficult, but I was happily surprised that it was not the case at all.


They were perfect with a cup of tea outside on the patio when the cool delta breeze had kicked in later that evening. The taste of ginger, cinnamon, and cloves, along with the raspberry honey and orange zest, were summer and fall rolled up together in one delicious bite. The madeleines were a hit with everyone and disappeared very fast. I'm so glad that French Fridays with Dorie got me to finally take my madeleine pans out and use them.


I bought my madeleine pans last summer at a garage sale and had them stored away. The large individual madeleine pans were still sealed in their original packaging. It wasn't until after I washed them and put them back in the bag that I noticed that the packaging didn't say 'madeleine' pans, but 'madelaine' pans. How funny is that?! Needless to say, madeleines will from now on be called madelaines in our home. :)

  4. I love your first photo, it looks just like a pile of sea shells. Very cute. And how wonderful that you got to use your pans. I had to go the muffin tin route since I don't have any pans.

  13. I think its just because they are French, that they seem so "difficult"... but them when I tell people I'm cooking out of a French cookbook, they wince and think me some kind of super great chef if i can "do that" -cook "French" food! lol! your bumps on the mini madeleines are pretty tall!

  16. Ok, now I want to give these another shot - and use my alfalfa honey. enough with the chocolate chips (how common)! These look lovely Elaine - especially with the tea setting. I have that exact same mini pan! From WS.... :) Happy Madeleine Friday!

  17. I love that you made 2 sizes! And the addition of raspberry honey must have been lovely - they make me crave a cup of tea.

    You must be far east and/or north of me. We've had an unusually cool summer this year in Ventura County.

  18. Looks like you've been gathering sea shells...such pretty little cake-cookies. And these are the kinds of treats that make me want to sit down and relax for just a few minutes and pretend that I've nothing to do but just enjoy these cookies. There is a romance about them...I thought they were a fun project. Yours look perfect.

  22. I loved these. I also used my pan for the first time, wonder what the difference is on the Madalaine molds....yours look delish, and that cup of tea is the perfect match for the last days of summer.
