One thing's for sure, since joining French Fridays with Dorie, I have gotten to know the grocery stores and markets in my area. Some weeks I spend more time hunting down ingredients than I do fixing the recipe. I still had to make one substitution for an ingredient, however, and that was because I forgot that the recipe called for crème fraîche and since it takes about two days to make it, I used mexican crema instead.
This dish doesn't require a lot of ingredients and once you have them all it is a perfect one to fix for a week night meal as it doesn't take more than 10 minutes to put on the table. The cookies are roughly cut with a serrated knife and mixed with the cream. You then slice the chicken breasts in strips and cook in oil or butter. I cooked mine in a little oil. You add the cream mixture and cook until the chicken is coated, season with salt and pepper. And that's it.
I served my chicken on a butter lettuce leaf and ate it like a wrap. I took Dorie's suggestion and made her Lemon-Steamed Spinach and I also had some leftover pasta as side dishes.
The chicken was good - not much of a crunch from the cookies after cooking them - but the cookie coating gave a nice sweet flavor and texture to the chicken. Visit French Fridays with Dorie to see what the rest of the group did. You can find this recipe on page 220 of Around My French Table.

ReplyDeleteI gave up on the cookies - the only LU we get around here are the Panky chocolate wafers. I love the wrap idea - great way to freshen up what could be a heavy chicken dish.
ReplyDeleteWhat a brilliant idea to eat the chicken as a wrap filling! Your dish looked a bit like mine, drier with visible cookie bits. I was getting a bit worried there for a moment because almost everyone else's chicken looked on the saucy side!

ReplyDeleteI was NOT able to find the cookies, so I substituted ginger snaps. I would like to try making this again if I ever do find the right cookies. Yours looks so fresh with the butter lettuce and spinach!

ReplyDeleteOver the past year, since I've been food blogging and have joined a couple of groups, I have acquired new knowledge relating to grocery stores. Now that I have specific things to make and need the right ingredients, including at least 10 different kinds of salt, my food hobbies have changed. I used to go see what was on sale or when I walked down the isles I would grab items and then go home and bake from what I had purchased. Now we have to go track ingredients down if we want to have the whole experience. I think we've all done a pretty good job. Now my problem is...where do I keep everything. Scary. Hubby quit entering some rooms in our house...like vacated kids bedrooms, where I have taken over a closet or two and sometimes stack ingredients on beds as I get ready for a project. A couple of my girls tell me I have become a hoarder and soon I'll be like that TV program where people can hardly get into their houses. Right now we all laugh about by foodie ways, but if I keep acquiring new ingredients and baking pans and gadgets at the rate I have over the past year...and I also keep finding cookbooks that I must have...then I think Hubby will have the garage sale he keeps talking about to get back our house. I'm glad I already have madeline pans or I'd have to find room for them too...like a few other other bakers will be doing this week. Well, it's all fun and my family likes eating all the food.
ReplyDeleteThis one was rich, so I like your idea of serving it as a lettuce wrap. Fortunately for me, the supermarket closest to me always has these cookies on the shelf. I didn't love the chicken, but I do love the cookies. Have a happy weekend!

ReplyDeleteYour chicken looks delicious - glad you liked it. And a recommendation for some of those extra cookies: I made David Lebovitz' lemon and speculoos ice cream and it is so tasty. It's a great way to make those cookies a little less holiday and a little more end-of-summer!
