What's so great about these slow-roasted tomatoes or tomates confites is that you put them in the oven at a low temperature of 225 degrees and you can pretty much forget about them for the next 3 hours. Only, you would never forget about them because your house fills with the wonderful smell of rosemary and garlic.
Some cherry tomatoes from the farmer's market, a little bit of sea salt, some pepper and extra-virgin olive oil, along with the cloves of garlic and rosemary gives you a wonderful tomato preserve that tastes so good alone, but also can be put into salads, added to rice and pasta, spooned over meat and fish...the possibilities are endless.
John ate some straight out of the jar from the refrigerator and loved them that way. I also served some on fish tacos as a tomato salsa along with some chipotle crema. The smokiness of the chipotle combined with the sweet tanginess of the tomatoes were perfect with the fish.
I think I am going to be roasting a lot more tomatoes by the summer's end.
You can see what the rest of the group did with their tomates confites over at French Fridays with Dorie and you can find the recipe on p. 342 of Dorie Greenspan's, Around My French Table.

ReplyDeleteIf I started out with such pretty tomatoes, I don't know if many of them would make it to the oven! Gorgeous! Love the fish taco idea!

ReplyDeleteElaine, you are responsible for my newfound Mexican food craving this weekend. Could I have a couple of those tacos to go? It will take me roughly ten hours to get there. ;-)
ReplyDeleteI love the contrasting colors in your tomatoes. They are too pretty!
Oh WOW. Those fish tacos look absolutely incredible ! We both loved these but Nana got hers done earlier in the week and played more with the leftovers (loving everything she came up with). As usual I was last minute and almost died when I found out it would take 3 hours on Thurs night - I was done cooking at 10:30 pm :) The family stilled loved it and all the kids taste testing what had smelled so good all night. A winner for sure.
ReplyDeleteWhat a great idea !! Thanks for this Elaine.
ReplyDeleteCherries Confit! Ooooooh I'm stealing that! Sounds so much fancier than what it is! Thanks!
ReplyDeleteI knew these were versatile, but fish tacoes hadn't occurred to me. Very clever!

I loved the fact that you could love 'em and leave 'em too. I love the look of those tacos - the perfect lazy weekend lunch.
ReplyDeleteThose fish tacos look wonderful! I love the look of your red and orange tomatoes together. I agree the house smelled wonderful while these were roasting.
ReplyDeleteI finally got around to making them and they were perfect tucked into Bison Burgers I made last night. I'm afraid they aren't lasting long as I too am eating them like candy.
