French Friday with Dorie: Café Salle Pleyel Hamburger

After having eaten one of these hamburgers, I can certainly understand why there was a write-up about them in the New York Times.


I have never had a hamburger quite like this. All I can say is that it was one of the most delicious burgers I have ever eaten. It was definitely the first time in my life that I didn't put mayonnaise, mustard, and ketchup on my hamburger. This one is packed with so much flavor that other condiments are not needed. I really like the onion marmalade on this so much better than the huge slice of red or white onions that are often served on your hamburgers in burger joints. I usually just remove those and leave them on my plate. The onion marmalade, however, is perfect and doesn't slide off because you spread it on the bottom bun, add a slice or two of thinly sliced dill pickle and then the hamburger, and parmesan cheese.


The tapenade-like mixture is made with sun-dried tomatoes, capers, cornichons, fresh tarragon leaves, and parsley leaves. This is mixed in with the beef (I used chuck) prior to cooking. With each bite of the burger you taste the parmesan cheese shaves, beef and tapanade, onion marmalade and dill pickle. Each bite is so flavorful. It is juicy and crunchy - just DE-LI-CIOUS. My daughter, who usually doesn't like pickles or onions of any kind on her hamburgers or sandwiches, loved her burger and said this was a keeper. I can't wait to see what the other FFwDorie group members thought about their café salle pleyel hamburgers.

  2. I admit, I've been skeptical about this recipe. But I've seen nothing but rave reviews so far this morning. I wonder if my girls would eat it, assuming I didn't tell them what was in it. =)

  4. It's amazing what a few ingredients can do... (I ALWAYS throw away the icky raw onions, so the marmalade was really nice for me).

  10. My daughter and I both loved it but my grandson didn't like it, too much stuff added to the meat and I didn't have any buns! Your burger looks yummy with the onion relish;-)

  12. Very nice, Elaine! But, I have to admit to putting mayonnaise on mine - LOL! It was really great - and I'm sure we'll use this technique again with other seasonings, but I especially like the sundried tomatoes.

  13. I'm glad you like it! It wasn't one of favorite burgers ever and I think I might try a little Dijon on a leftover one ... And if I make it again, I'll exclude the tarragon. I'm not a fan.

  18. I'm with you. Just about a perfect meal. Although I frequently play with hamburgers and come up with good condiment free versions, this was so good that OTHERS didn't request them either. THAT is a first.

  20. I had to have mayo in mine... if the French and their neighbors dip their fries in the stuff, surely it couldn't have been that big of a faux pas! I have to agree with you, this was a burger worth raving to the world about.

  22. I really liked this burger, too. I couldn't agree more about the onion that restaurants put on burgers - it's always too thickly cut and can overpower any other flavours. I'm a fan of the onion marmalade, instead. I like your comparison of the ingredients for the burger to tapenade. Very apt.

  23. Of course we had mixed feelings, but I agree it didn't need any extra condiments. Over all we liked the added flavors, except the capers. The marmalade was a hit. And your burger looks simply perfect in the photo!
