I had to make this recipe twice. The first time I followed the recipe exactly and put in 1 teaspoon of salt per directions. I know. Silly me. I should have followed my instinct and just put in a pinch, but I didn't, so we ended up with salt ice cream. Not good.
I made it again, though, and this time only added a pinch of salt. The result was a creamy delicious coffee ice cream which happens to be John's favorite. He has been happily eating it. I made a mark through the 1 teaspoon of salt in the recipe in the BAKED Explorations book and wrote in 'pinch', so I won't make the mistake of adding way too much salt when I make this again.
Served with a few coffee beans gave it a nice little crunch. Shhh! Don't tell anyone, but I actually ate this for breakfast. As hot as it has been this week, it tasted so much better than drinking hot coffee.

Well that is one way to get your morning caffeine fix!
ReplyDeleteI had to check my book to see for myself--yep, it says 1 tsp. Crazy. My usual salty caramel ice cream recipe only calls for 1/2 a tsp. I'm not a fan of coffee (or coffe flavored things), but that does look really good. =)
ReplyDeleteYeah! Glad the pinch worked! It's such a wonderful Sunday ice cream photo Elaine! One of my favorite ingredients - coffee "anything"! I need to post mine...Happy Sunday!
ReplyDeleteBeautiful photo. I emailed everyone I know who has this cookbook...most of my family... and told them to do just what you did. We love homemade ice creams and this base has such a lovely texture even after being in the freezer for a day. Always enjoy your posts.
ReplyDeleteElaine- yours looks so good in the cup and with the coffee beans! sorry you had to make it twice, i think i reduced the salt, but don't remember how much. glad you enjoyed it after all that!
ReplyDeleteThis was my first time making anything with this group. And though I only made it once, I couldn't help but notice the salty taste. It's good..but more like a salted caramel taste than anything. I should have questioned it since most ice creams only require a pinch of salt! Your ice cream looks creamy...and such a pretty photo! : )
ReplyDeleteElaine-- this looks scrumptious! I haven't had coffee ice cream in ages but I am craving some mightily looking at your pictures! Thanks for the head's up on the 1 tsp. of salt. I have this cookbook so I'm going to mark my copy now. I'm sorry you had to have a ruined first batch!
ReplyDeleteLooks wonderful! Ice cream for breakfast sounds entirely reasonable to me. Especially here in Austin where it's 108 F today!
ReplyDeleteI love the idea of the coffee beans on top! Nice! I think we have the same ice cream dishes. :-)
ReplyDeleteIce cream is my favorite breakfast!
ReplyDeleteI can imagine how much better this would taste with less salt -- and with coffee beans... Yum! I have to admit that I ate a piece of coffee ice cream tart for breakfast, too! :)
ReplyDeleteLooks creamy, delicious, and refreshing!
ReplyDeleteI also ended up with salt ice cream, but mine took on a salted caramel flavor that I didn't really mind. I want to try it again with actual coffee flavor though. Great tip to write it in the cookbook.
ReplyDeleteyour ice cream looks delish! great presentation!
ReplyDeleteLove the color of your ice cream and the nice espresso bean on top!
ReplyDeleteThat's definitely a late summer breakfast! It looks so pretty with the coffee bean on top.
ReplyDeleteThat's too bad that your first batch was ruined by the salt. I find I reduce the salt in many recipes, as it's just too much.

So sorry you had to make this twice...but it looks as though it was worth the trouble! I didn't get to make any ice cream this past week end! We had Irene visiting! She left me with out power for about 20 hours...but that's ok because so many people have had so much worse! No power is the least of the problems.
ReplyDeleteI love Baked Explorations! They have such great recipes. Beautiful pictures (:
ReplyDeleteElaine, I have just posted my seven links and I picked you to play along! Hope you will join in! Have a great day!
ReplyDeleteLOL, I think I could do this for breakfast, too! Beautiful, Elaine! (and I'm off to mark my cookbook, too)
ReplyDeleteice cream for breakfast is one of adulthood's great pleasures.
