French Friday with Dorie
I made this on Presidents' Day since I had the day off and it was a sunny, breezy day - just the kind of day that looks like spring, but still feels a little bit like winter. It turned out to be the perfect kind of day for a bowl or two of pretty green soup. And the best part is that it took no time at all to cook. All you need is some chopped onion, salt and pepper, some broth (I used chicken broth) and a package of frozen peas and you have a delicious soup. I also minced some garlic and threw it in while the onions were cooking to give it a little extra flavor. This soup is supposed to also have romaine lettuce, but I forgot to get some at the store.
It is supposed to be a creamy soup, achieved by either blending it in small amounts in a blender or using an immersion blender. I used an immersion blender, but chose to leave it a little chunky since John prefers chunky soup.
I garnished it with a little bit of sour cream and some fried leftover bits of baked ham.
This was such a delicious soup. The 'fresh' taste of the soup, along with its beautiful, vibrant green color, was just what the doctor ordered on a cool winter/spring day.

I don't think omitting the lettuce really detracted from the soup at all - your soup has a very lovely, vibrant color!

ReplyDeleteVery nice! I usually don't buy romaine lettuce (it always goes nasty before we eat it all), so I was wondering how the soup would be without it. Nice to know I could skip it next time! Lovely soup, Elaine!

ReplyDeleteYour beautiful green color was much prettier than mine. Although I liked this so much, I would have enjoyed more flavoring and I think adding garlic was an excellent idea. I really don't know what the lettuce did or didn't add but cannot think that you missed out by not using it. Someone suggested argula and I think that might be a better choice if you're going to use lettuce at all. I think it's "very French" and, after all, this is a "very French" cookbook. I don't think you strained your soup and that was a good call, Elaine. I think I strained some of the flavor out of mine.

ReplyDeleteThe chunkiness of it actually gives it a more spring look to me. I bet with or without the lettuce this is a good one. But its nice to know you can get rid of wilting lettuce if you have to. :)

Elaine, what a pretty presentation of your striking green Pea Soup. Nice touch to add some sour cream and bits of smoked ham! Great recipe that most of the Doristas seem to have enjoyed - I did not think that it was necessary to strain the soup eiter.

Straining would have taken out too much flavor... I'm curious about the difference in the flavor without the lettuce?

I prefer chunky soups, usually, too. I also don't see the point in straining out all the goodness for a smooth texture. Your soup looks perfectly comforting. Lovely presentation!

ReplyDeleteI am with you about the color and texture and love that you served it so beautifully in that cup. Apologize for the late comment- I had too much fun running around seeing the Barefoot Contessa and cooking and ended up with a miserable cold (but it was worth it). Glad I had so much soup to enjoy as it was indeed "just what the doctor ordered" :)
