French Friday with Dorie
There's really not a lot to say about this soup other than it is an easy and quick soup to make and perfect for a weeknight meal after a looonnng day at work. The simplicity of the broth (I used vegetable broth) seasoned only with onions, garlic, a little bit of thyme and salt allows the vegetables to be the stars of this soup. There were carrots and collard greens in our CSA farm box when I made this, so in the soup pot they went. I also added one lone potato per the recipe.
I wasn't sure what my family would say about the collard greens in the soup, but they said it was delicious (I thought it tasted really good) and since it disappeared quickly I believe it was a hit.
I served grilled pimento cheese sandwiches alongside. Yes, I am on a pimento cheese kick and if you have never had a grilled pimento cheese sandwich, I highly recommend it. It takes grilled cheese to a whole nother level.

I love the color the collard greens give to your soup, Elaine. I LOVE grilled cheese sandwiches, so I'll have to try grilled pimento cheese sandwiches. I served cheese quesadillas with my soup. Similar idea...

ReplyDeleteCollard greens is a nice addition and adds a nice touch to this soup. We turned all of our collard greens from our CSA into pesto this year - it seemed to be the easiest way to sneak them onto the plate.
I have collards at home! I'm so stealing this idea when I make it for lunch today.

ReplyDeleteThose collard greens brought your soup up to a whole different level, Elaine. Although I graduated from Florida State and lived in the South for 10 years, I've tasted but never cooked with collards. I think it made a lovely looking soup and obviously a tasty one. I actually love pimento cheese but have never made a grilled pimento cheese sandwich. It sounds delicious and I will try it next week. I may go on a pimento cheese kick of my own. Thanks for the suggestion.

ReplyDeleteanother CSA-er! :) we totally did the same thing and we chose to use veg broth too! - no sense in using chicken broth for a veggie dish I think.
