Pimento Cheese Tea Sandwiches

for Jessica's, My Baking Heart, Virtual Bridal Shower



When I received the invitation from Nikki for Jessica's Virtual Bridal Shower, I was so excited because I knew it meant that Jessica's wedding day would be just around the corner. I first met Jessica through our cooking group, French Fridays with Dorie. Jessica has a beautiful blog and we share a love for jadeite and all things vintage. Jessica is a southern girl and I knew right away that I wanted to make pimento cheese tea sandwiches because it wouldn't be a southern bridal shower without them. These are easy to make and very delicious. It was fun making them and even more fun eating them because it took me back to wonderful memories of my mom making them when I was a kid. A jar of pimentos was a staple in my momma's pantry.

Pimento Cheese Tea Sandwiches

1 pound sharp cheddar cheese
3/4 cup mayonnaise
1 (4 ounce) jar of chopped pimentos, drained
1/2 teaspoon sugar
Salt and pepper to taste
Loaf of thin-cut white bread with crusts removed

Grate the cheese on the big holes side of a box grater into a bowl. Add the rest of the ingredients. Mix well. Cover the bowl with plastic wrap and let chill in the refrigerator for a couple of hours to let the flavors meld.

Roll each slice of bread with a rolling pin to flatten it a bit. I used a cookie cutter to cut shapes and then spread one side of the bread with the pimento cheese and topped with another piece of cutout bread. Traditionally, the sandwiches are cut into triangles, but I wanted to make them a little prettier for Jessica's shower. 

This is the traditional recipe which I am used to, but you can make all kinds of variations. Just use your imagination and have fun.

  6. Awww, love that you cut your sandwiches into such delicate, pretty shapes! They're absolutely perfect for the bridal shower :) I've never had pimento cheese and I'm pretty sure I'm really missing out!

I'm a Northeastern girl, so I'm not familiar with pimento cheese spread, but have seen it made by Paula Deen on the Food Network. Your tea sandwiches look so dainty and ladylike while uniquely Southern and retro (perfect choice for Jess!)   17. Elaine, this is such a neat idea - I had never heard of a Virtual Bridal Shower before but it really sounds like such a warm and personal gesture! Wonderful! And, of course, I love your little pretty flower shaped Tea Sandwiches with the Pimento Cheese - which I have never made or tasted either but you have me curious now because they do look delicious!
