Gorgonzola dulce. Soft. Mild. Creamy. Delicious. What a delightful surprise this was in our French Friday recipe. I paired it with a sweet tart Pink Lady apple and it was a perfect combination.
I made two 4 and 1/2 inch quiches with Dorie's tart dough recipe. Her tart dough always bakes into the most beautiful, flaky pastry shell. You only need a few ingredients for the filling: onion, apple, gorgonzola dulce, heavy cream, eggs and salt and pepper to taste. That's it.
The result is a creamy, salty sweet quiche that has a slight crunch from the apple pieces. I made this for Sunday brunch and it is a quiche that I will be making again. Next time I think I will take Dorie's suggestion and throw in some toasted walnuts for a surprise and some added crunch and John thought it would be extra tasty with some finely diced green onion instead of the yellow onion I used which would also give it a bit more color. This is a recipe to have fun and play around with.

This sounds good, I bought some nice blue cheese yesterday. Could be an idea for using it
ReplyDeleteWasn't this one delicious! We loved it too. I have to say that I am very impressed with our group, I really thought that more would skip this week because of the blue cheese. But so far I haven't even read a single bad review of this recipe. And what cute little mini quiches, great brunch idea.

ReplyDeleteElaine, Your mini quiches look so wonderful! I could not find the dolce gorgonzola...I just used plain gorgonzola! Honestly, I didn't know there was a difference. I haven't tried mine yet but, it looks so good! Happy Friday!!

I used plain Gorgonzola because that's what I had in the fridge, but I do love the dolce version (though to be honest, I've seldom met a cheese I didn't like). I did through a handful of toasted walnuts in and recommend that for next time. Glad to hear this was popular at your house. I can understand why! Have a great weekend.

Beautiful "sun drenched" quiches Elaine! Love the "mini's" of anything... don't you? Glad you liked the cheese - it's definitely a flavor on its own, but I do like the TJ crackers. :) I have never done the apple/cheddar/cheese version of anything, but this sparks my interest! And yes, green onions over yellow - great idea!

ReplyDeleteLove your quiches. Dorie's tart dough is my favourite for crusts, now. It works beautifully with conventional flour and with a gluten-free flour mix.
