BAKED Sunday Morning: Cowboy Cookies


When I e-mailed my friend and fellow BAKED member, Mike, and asked him if he had made these cookies yet and if he had, did he think the thin, salty pretzels were necessary, he e-mailed back and said "Yes!" And, he said that he had made them a couple times already and that he thought they were really good if you put all the pretzels in the batter rather than just 1/2 cup the recipe says and then put the remaining 1/4 cup on top. So, I did just that.


I also made these Texas-sized cookies because, after all, these are Cowboy Cookies and to me, cowboys are larger than life and warrant an ice cream-size scoop.


The verdict? Three thumbs up at our house. The oatmeal, chocolate chunks, and the little surprise of thin, salty pretzels, along with the hint of espresso coffee made these a delicious chewy cookie on the inside and nice and crispy on the outside. The only thing difficult about making these was letting the dough chill in the refrigerator for at least 4 hours before baking them off.

  1. I'm happy to know that you used the entire 3/4 cup pretzels in the recipes. I didn't want some on top, but I only used 1/2 cup in the cookies, afraid that... i'm not sure what I was afraid of. Next time i'll definitely put the full 3/4 cup in! Great job on yours. They look great!

  4. I loved these, too! I agree, it was tough leaving them in the fridge! One of the great things about making cookies is the instant gratification! Enjoy your day!

  7. Great post, as always. I also added all the pretzels to the dough. My problem is that it is hot in AZ and hotter in my kitchen with the oven on and I never have an inch of fridge space (don't know how that happens since the kids are all gone?) so I had to get baking or the butter that was supposed to be kept cool would be melting. And it worked OK. But I did not flatten the cookies. If I had to wait for a few resting hours, it would not matter if I had fridge space, all the people in-and-out of my house would have found and eaten the dough...you are right, it is good.

  12. I forgot to mention in my post that I put all the pretzels in the batter, too. I loved them this way but I may try the 1/4 cup on top next time!

  13. I love that you made the cowboy cookies "Texas sized." Very appropriate! :) These sound wonderful with the pretzels and chocolate and espresso powder! I'm sure the sweet and salty combo makes for a delicious cookie!

  15. Woo hoo! Glad you used the pretzels - and your were so cakey! Mine were flat as a pancake, and chewey, but good! Strange. Texas size - I love big cookies - they look great!

  17. I like all the ingredients in your cookies and I especially like the name Cowboy Cookie. I can just imagine a bag of these scrumptious cookies on the side of a horse- bouncing along in a saddle bag;-)

  18. These sound great, Elaine! I love the idea of pretzels in a cookie. Call me weird, but I don't overly sweet baked good. Salty pretzels in cookies sound very appealing.
