French Friday with Dorie: Pumpkin-Gorgonzola Flans


I saved this French Fridays with Dorie November recipe for last because it was the one I was most unsure about. I have only ever had sweet flan so I could not wrap my brain around a savory flan - especially a savory flan with gorgonzola cheese.

Our son is home for Thanksgiving break from school so he was a taste tester this week. And I have to be honest - the response was what I had expected after reading some of the other posts from fellow FFwD members. 

The recipe was so simple to put together and looked so pretty when I pulled it out of the oven, but then came the taste taste. I had warned them beforehand not to expect them to be sweet. They didn't hate the flan - they just didn't think it had the consistency of flan and once you got past the gorgonzola cheese it didn't have much flavor. I thought I had seasoned it well with salt and pepper, but apparently not enough.



I didn't like the first taste I took so I added a dollop of sour cream and poured some maple syrup like Dorie suggested. But I had to keep adding maple syrup because I agreed with my husband and son that it didn't have much flavor. The toasted walnuts gave it a nice crunch, but I also didn't care for the gorgonzola cheese. My husband added some cinnamon and pumpkin pie spice to his and finished his right off. Of course, his favorite dessert is pumpkin pie so I wasn't a bit surprised when he doctored it up a bit.

  3. You would never know it wasn't too your liking - as they are presented so nicely - they look fantastic in the jadeite! Gorgonzola and pumpkin, I have to be honest don't sound too good - but trying new recipes is the fun part!

  4. Beautiful presentation. Sorry you didn't like them more. I am in the camp who really thought honey made the dish - they definitely needed something.
    I guess trying new things is half the fun!

  5. Your flans are presented beautifully. My brain just wants all pumpkin to be sweet...pie, bread, muffins, cookies...so many wonderful baked goodies can be made with pumpkin...but...I think this flan would have been better with sweet potatoes and brown sugar and.....yes, it does need something. I guess we ate it just telling ourselves it was a good vegetable and healthy.

  9. I guess that my European upbringing influences my tastes, because I do not have an automatic sweet response to the word "pumpkin":)
    I make savory pumpkin soups, and love the balance of sweet and salty.
    I loved these flans - the pumpkin was not too sweet, the gorgonzola was just a bit tangy, walnuts added just enough crunch - all in all a great little side dish.
    But, the most important thing is to try, even though we don't end up liking the end result. At least now you know where you stand on the pumpkin-gorgonzola line:)
    Your dishes are so beautiful, btw, great contrast in colors.

  10. I didn try this with Gorgonzla cheese but must sometime, loved it with cream cheese and dont know it got a crab meat flavor the next day, which i lveeeeddd!
    Love these pretty cups u baked in , super super cute, lovely color too!!

  11. It looks lovely in the green cups, but too bad it wasn't quite what you were looking for. I have been a terrible FFwD slacker this month, and even made some things I didn't get posted, but I didn't get this made. Too bad, as I've got all the ingredients. I think I have to try is to see what I think, as the reviews have been so mixed.

  13. I completely agree with you. This recipe was easy to make and looks great, but the taste just doesn't match up. As Serene said, we don't have to like everything we make.
