Strawberry-Shortcake Cookies

Today has been a nice, cool day here in the Sacramento Valley, so I took advantage of the opportunity to turn on the oven and bake some cookies. I don't like to bake much when the weather starts warming up, so I was very happy to be able to do some baking this morning.



This recipe is a one-bowl recipe (how I love those!) from the June issue of Martha Stewart Living magazine and since I had a pound of Driscoll's strawberries on hand and some heavy cream, these cookies were a perfect choice. Similar to the strawberry scones I usually make, these turned out very moist, not too sweet, and very delicious. Along with a good cup of brewed tea, it was a perfect mid-morning pick me up after getting up early to watch the women's finals of the French Open.

  3. How funny, I was just getting ingredients out to make these! Yours look just like they should - so it shouldn't be too hard. I'll keep my fingers crossed - love the photo!
