BAKED Sunday Morning: Speculaas

No matter whether you call these cookies Speculaas or Speculoos, they are a Dutch brown sugar shortbread cookie that are traditionally served on St. Nicholas day. Matt and Renato's version in BAKED Explorations, Speculaas, is highly fragrant with the addition of grated orange zest. 


In the Baked's notes to the recipe it says that this is a close version to the European Biscoff cookie, but I think these spicy shortbread cookies are far better than the store bought ones. They are a perfect dunkin' cookie for tea or coffee.


I have to say that I was a little surprised that the recipe didn't use a standing mixer as many of the recipes used in this book have been modernized, but this one suggests cutting the butter into the flour mixture with a pastry cutter or fork which I gladly did because this is still my preferred method of making scones. The only thing I did differently from the recipe was instead of forming the dough into a ball before chilling, I formed it into two discs to make it easier to roll out.


I really enjoyed this cookie, but I think I would have preferred it more during the holidays. By the time I made these I had had enough of Christmas cookies, so I will try to make these again for Christmas. You can find the recipe over at BAKED Sunday Mornings.     1. Thank you! I didn't want to compare them in my post because it has been over a year since I made Dorie's, but it seems to me that these are entirely different cookies. Not only the technique was different, but also the taste. Both are very delicious and I am glad I made both versions. If you like zest in your baked goods then you will want to try making these as they are so fragrant and the orange flavor sings in them.

    What a great pre valentine's treat!
    The look much darker than I expected. My dough is still in the fridge but will have to compare. I love spices so hopefully these will turn out just as nice as yours! Love love the snack set! :)

  7. They turned out beautifully! I agree with Mike.. I didn't expect that they would be so dark.. but I'm sure they are delicious!

  8. I agree with your other "friends"...these look like darker molasses cookies. I like the flavor and Hubby says they are really good, but he thought I was making Christmas cookies...so I guess we are all thinking the same thing. I would like to make these again next Christmas...I'm moving on to more chocolate. Nice post as always.

  15. I enjoyed mine with some tea as well. I love the heart shape. They came out great! I had all the ingredients on hand except the orange. So, I didn't use it. From reading all the posts it sounds like it may have made a bit of a difference.

  20. Your hearts are adorable. I was too lazy to roll out my dough. I formed mine into a log and did the slice and bake thing. I also made Dorie's Speculoos from AMFT and liked it much better than this recipe. Fun to team with your group this week!

  23. Elaine - I love Lady Grey, too - I especially like it iced. We go through pitchers of iced tea - very un-British, I know! LOL! I was excited to get so close to that heron! We've had one hunting in the field behind our house, too. They are just amazing.
