BAKED Sunday Morning: Sweet & Salty Brownies


This week's selection for BAKED Sunday Mornings is the Sweet & Salty Brownies. These brownies take a little while to put together, but they are so worth the effort. You first start with making the caramel. I actually had to make two batches because my first batch was too light because I took it off the heat too soon. The second batch had a nice amber color, but it took awhile for it to get to the consistency of caramel. When I put it on the brownie layer in a zig zag pattern it was a little runny so some of it got on the sides of the pan. When the brownies were in the oven the caramel was bubbling happily around the edges and I was afraid it was going to burn because Matt & Renato's notes caution about getting the caramel close to the sides of the pan. Luckily though my caramel didn't burn, but where it bubbled a little on top became a nice crunchy caramel. My brownies are thicker than they should be because I don't have a 9" x 13" pan - I had to use an odd size approx. 8-1/2" x 10-1/2".

I really like the fleur de sel on the top of the brownies. It is a nice contrast to the sweetness of the rest of the brownie. The caramel layer in the middle all but disappeared and in its place is a wonderful chocolate fudginess. The fudginess combined with the salty topping and the crunchy caramel in places taste so delicious. It is a perfect brownie for a chocoholic like me and goes perfectly with a glass of cold milk.

  4. I loved the FDS on the top (AND in the caramel) - you can never have too much! These look wonderful (especially with comics!) - and I agree, they look thick and "fluffy" - mine were kind of dense. But delicious none the less!

  5. Your brownies look scrumptious. I prefer fluffier, cake-like brownies as opposed to a gooey brownie. Yours seem to have hit a nice balance!

  9. those turned out GREAT! I always tend to place my bars and squares and brownies in the freezer - makes them easier to handle (plus I like to know things freeze so that I can hide half the pan and not be tempted to eat it all at once!). The fleur de sel looked perfect on top!
