For some reason I have been craving ham for the last several weeks and when I saw that these biscuits were on the March schedule I knew that I couldn't make them without cooking a ham. I remember when I was a senior in high school I would often stop at Bojangles to pick up a ham biscuit or two before heading to my afternoon job. Although I'll eat ham as a main dish, the way I love to eat ham the most is on bread or a biscuit.
These biscuits are so simple and easy to put together. Just some flour, a little bit of sugar, baking powder, and salt whisked together and then you work cubes of butter in with your fingers. I am really enjoying the recipes lately where you use your fingers instead of a machine to get the desired consistency. Onion is added for a little extra flavor. I cooked my onion a little longer than the 3 minutes that the recipe instructed, but I think after all that caramelizing of onions for the soup a few weeks ago, how could I not? Add some milk and you have an easy dough that you pull together with a fork. No rolling pin is necessary for this dough because all you need to do is pat it into a circle about 1/2 inch thick and cut with a biscuit cutter.
I baked the biscuits at 400 degrees for 15 minutes. They were soft and flaky and didn't need butter. John thought they were really good and ate his along side his ham, potatoes and zucchini. I, of course, ate my ham on biscuits. I loved the little bit of sweetness from the caramelized onion with the ham and the requisite yellow mustard. Saint-Germain-des-Prés-Onion Biscuit is a fancy name for a simply, lovely biscuit.

ReplyDeleteYour biscuits are perfect. And they pair well with a salty meat...the ham looks delish. I had to caramelize my onions too, and I'm glad I did...all the more flavor. I need to slow down and get my hands into these recipes, I've noticed that those who used their hands for mixing and patting got the best rise on their biscuits. Yours look really good.
