Rhubarb "No Crumb" Bars

Now that rhubarb is readily available at the market, I wanted to make something with it - preferably a dessert. I picked some up this week and decided to make the Rhubarb Crumb Bars from Everyday Food. It is a quick and easy recipe, but if I make it again I will be sure to refrigerate the topping as the recipe directs. I was in a hurry yesterday morning and just put the topping together and poured it on top of the batter and rhubarb mix. The bars turned out okay, but they didn't have the texture and taste that I was going for, and, of course could no longer be called Rhubarb "Crumb" Bars. No matter though - they were gone it no time.

  1. I hope you saved one or two for me! I used to hate the taste of Rhubarb as a kid... now, I love it. FedEx does have overnight service available.. *hint hint*

  2. So THAT'S what you've been doing all day! :) It looks absolutely fantastic! Perfect for that warm weather down there - or here - it was 82! :)

    I'm sure they were enjoyed - (with ice cream perhaps)?
