When I have some overripe bananas I usually make some banana nut bread, but I decided to try something a little different this time. On Labor Day I whipped up some banana cupcakes from Everyday Food sans the frosting. They were so moist and delicious that I was asked to make an encore batch last night.

It's really a one bowl recipe - stir in the ingredients and spoon into a cupcake/muffin tin with liners. It's that easy and they taste so good that I don't think I will be making banana nut bread that often in the future.
